Although her recipe remains a family secret she will reveal that it is most probably the extremely generous amount of 60% cocoa solid Belgian chocolate included, combined with honey, delicious free range market farm eggs, butter and rice flour that produce the moist creamy consistency that is so often lacking in wheat and gluten free cakes.
